Blueberry Muffins – Simple, Delicious – and from Michael’s Genuine Pastry Chef

I had the great fortune to eat at Michael’s Genuine – newly opened on Grand Cayman Island (friendliest Caribbean isle I’ve ever visited). More on the main foods later, but the pastry chef Thais Rodriguez provided wonderful blueberry muffins for us during our stay.

I am sharing the recipe for the Blueberry Muffins here now – they were divine and great for the last of the fresh blueberries wherever you get them.

Blueberry Muffins

  • 2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups fresh blueberries – no substitutions
  • 1/2 cup (1 stick) unsalted butter
  • 1-1/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup milk
  • 1/4 teaspoon nutmeg

Preheat oven to 375 degrees. Butter (or use muffin papers to line) a regular muffin mold to make 12 muffins, or a mini-mold to make about 22 mini-muffins.

In a medium bowl, whisk the flour, baking powder and salt. In bowl of an electric stand mixer, fitted with paddle attachment, cream the butter and 1 cup of the sugar on medium-high speed until light and fluffy, about 3 to 4 minutes. Add the eggs one at a time on low speed until combined. Add the vanilla and conintue to mix for a few more seconds until fully incorporated.

Still on low speed, ad flour mixture, beating until just combined; about 30 seconds, then the milk. Scrape sides; and mix just till combined. Remove the mixing bowl from mixer.

Using a rubber spatula, gently fold in blueberries. Use a tablespoon to fill the muffin cups 3/4 full. Mix remaining 1/4 cup sugar with nutmeg and sprinkle tops of muffins with mixture.

BAke muffins for 30 minutes (regular) or 18 minutes, mini-muffins; rotate the pan halfway through. The muiffins are done when they are golden brown and a toothpick comes out clean when inserted in center of muffin.

Remove and cool on a rack for 10 minutes before removing muffins from pans.

Makes 12 regular or 24 mini muffins.

    I made me some of them muffins yesterday and they were deeelicious.

    Their cranberry-orange scones weren’t bad, either, but I didn’t get that recipe!
