EatBeat: Chef Roy Villacrusis to Create Menu for Newcomer Dirty Martini

The soon-to-be newcomer at Downtown at the Gardens, Dirty Martini, will have a menu designed by Roy Villacrusis, chef/owner of the much lauded Kubo of North Palm Beach.

The chef’s focus here will be what he calls “global collective” rather than specifically Asiatic cuisine as at Kubo.

Dirty Martini, scheduled to open in May,  is conceived as an upscale martini lounge, with tapas-style dishes. Fried olives stuffed with cheese, flatbreads and tuna carpaccio are dishes he’ll riff on; caviar service will be available.

The man behind Dirty Martini is Cleve Mash, who partnered with rocker Vince Neil for Dr. Feelgood’s Bar and Grille, as well as Lost Weekend, Monarchy and Reef Road Rum Bar – all in downtown West Palm Beach.

The new space is 8,600 square feet, with three separate areas for party-ers. Callin Fortis, of Big Time Design Studios, is designer of the space, that will feature green crystal chandeliers, custom-designed ceilings in the shape of olives, and lighted bar tops. An outdoor patio with a view of the lake will feature 14 TVs.

More than two dozen signature martinis will be stirred or shaken – most with Hollywood names like the George Clooney – a dirty martini with vodka or gin, dry vermouth and a splash of Dirty Martini mix.

Happy Hours are 4-7 p.m., and the place will be open 4 p.m. till 3 a.m. daily, with a DJ spinning tunes; live bands will also play.
