Spoto’s Oyster Bar will have a new sister restaurant on PGA Boulevard in the Commons in Palm Beach Gardens when John Spoto opens the Water Bar & Grill. It springs to life in the old Oakwood Grill in the Commons location next week.
The space has been completely remade, with aqua blues, sea-washed grays and glass accents. The room will be more modern, Spoto said, to reflect the modern seafood-forward menu.
The menu will be seafood-forward. Spoto said more fish was ordered at his former steakhouse than meat, so he’s capitalizing on diner preferences. He’ll be bringing in several different fishes in their whole form – some oven roasted in the wood-burning ovens, some used in chowders and soups or salads.
Meat-eaters are not forgotten; popular landlubber dishes, also from the wood-fired grill, are available from the old Oakwood menu. A large wine and beer list is in place, along with a full liquor bar.
