EatBeat: John Spoto Returns with Water Bar and Grill Opening Wednesday

November 19th, 2011 · 2 Comments

Concept drawing of Spoto's Water Bar & Grill in PGA Commons, Palm Beach Gardens

Spoto’s Oyster Bar will have a new sister restaurant on PGA Boulevard in the Commons in Palm Beach Gardens when John Spoto opens the Water Bar & Grill. It springs to life in the old Oakwood Grill in the Commons location next week.

The space has been completely remade, with aqua blues, sea-washed grays and glass accents. The room will be more modern, Spoto said, to reflect the modern seafood-forward menu.

The menu will be seafood-forward. Spoto said more fish was ordered at his former steakhouse than meat, so he’s capitalizing on diner preferences. He’ll be bringing in several different fishes in their whole form – some oven roasted in the wood-burning ovens, some used in chowders and soups or salads.

Meat-eaters are not forgotten; popular landlubber dishes, also from the wood-fired grill, are available from the old Oakwood menu. A large wine and beer list is in place, along with a full liquor bar.

The grand opening is Wednesday, Nov. 23, at 5:30 p.m. – watch for more on the Water Bar soon here.

Don’t Valet when you go to Waterbar. By 11:20pm on a Friday night March 15, 2013 after a meal at Water Bar my husband went to Rocco’s Taco for a drink after eating at Water bar and finds out both Water Bar and Valet company locked up and went home! No keys and had to get a ride home. Saturday morning using our spare key our car window was left down all night!! So much for a good evening out! Alex the valet owner and John Spoto both apologize but you would think someone would even compensate with a free meal or taxi cost for ride home??? Nada!!!!!! Buyer beware!!! Park at your own risk!!
