EatBeat: Roy Villacrusis Makes Dream of Asian Restaurant Kubo Come True

For way too long, chef Roy Villacrusis has been working to open an Asian restaurant of his own. He made that dream a reality last week when he accepted keys to a space that will be Kubo, a restaurant he’ll open sometime within the next two months in Crystal Tree Plaza, North Palm Beach.

Villacrusis is probably most known locally as Mark Militello’s sushi wizard from Mark’s at CityPlace and Mark’s in the Park in Boca.

He’s spent the last few years traveling to several Asian countries to explore their foods and both modern and traditional cooking methods. He’ll apply what he learned from eating in “incredible” places in Japan, the Philippines, and around the Pacific Rim.

Casual, and approachable food with the chef’s own spin is planned. “Kubo is loosely based on Japanese izakayas, which literally translates to Japanese pub,” Villacrusis said. Kubo means “small house” – thus a house on  his logo.

Villacrusis described his foods as “Asiatic cuisine” for lack of a better term, he said. “It’s not fusion – it’s not an intentional ‘putting ttogether’ of two cusisines, nor is it ‘global’ since, there is no such thing in my opinion, and it’s not really just Asian, either. We won’t limit ourselves to a one-way influence.”

There will be sushi, but in forms that push the envelope of the traditional fish-rice roll. But other interpretations may have nothing to do with raw fish.

A lot of hands-on is in the works – the chef plans to do a lot of the build-out and decor of the former Lanni’s Italian restaurant on his own. Those who are familiar with the chef know of his perfectionism in plating his foods and the art surrounding it. Expect eye-popping presentations here and a “transporting” decor.

    The article mentions Crystal Tree Plaza in PBG. I was thinking it was the one in North Palm Beach. Is there another in PBG and if so where is it?

    I look forward to Chef Roy’s culinary creations. There are only a few places I enjoy in North County: Paddy Macs & the Capital Grille. Kubo will definitely be a welcome addition.
