EatBeat: Signature Chefs & Wines Extravaganza Kicks Off Charity Dining Season

Chefs from Signature Chefs event

More than 30 chefs are pulling out the stops Friday night at the Boca Raton Resort and Club for the March of Dimes event, the 5th Annual Signature Chefs and Wine Extravaganza.

The menus prove it – here’s a taste:

  • Smoked cocoa-dusted venison tenderloin with creamy manchego polenta from Absinthe
  • Slow-braised pork ragu with ragatoni and whipped ricotta from Caffe Luna Rosa
  • House-made ravioli with creamy leek-Champagne sauce and Parmigiano Reggiano from Caruso
  • Chocolate cararmel pretzel tart with dark chocolate ganache, sea salt and curry-infused Xocopili chocolate creme caramel from Dada
  • Coffee-rubbed lamb marshmallow brochette and apple celeriac soup from Temple Orange at the Ritz-Carlton
  • Seared scallop with roasted artichoke, shittake mushroom and asparagus, with sweet onion and celeriac puree from the Atlantic Grill at the Seagate Hotel
  • Caribbean lobster salad with coconut habanero dressing from Ironwood Grille
  • Short ribs with smoked tomato and almond relish from Publix Apron’s Cooking School
  • Buttermilk ranch marinated sirloin with smoked gouda mashed potatoes from ZED451
  • Sous vide duck breast with fennel-cashew relish and balsamic beurre noisette from the Mar-a-Lago Club
  • French colonial roasted pork loin salad from Cafe Boulud
  • Country rillette with melba toast, watercress, “cracklin’s”; chocolate mint marshmallows for dessert, from Michelle Bernstein’s at the Omphoy

Dozens more dishes are on the menu from noted chefs around the county. All will be paired with wines. A bonus: the Boca Resort and Club is offering a special event rate of $99 nightly (rooms available at that rate before and after event as well).

Some of the restaurants will be offering auction packages, including weekends at the hotels with dining, or special parties and group wine dinners. Other luxury auction items will be up for bid at live and silent auctions, and live entertainment is part of the night’s festivities.

Special honoree at the event is the Countess de Hoernle, long-time Boca Raton benefactor.

Tickets are $100 in advance for General admission – $125 at the door; $125 advance for VIP; $150 at the door, and group tables of 10 are $1500.

This is typically a sell-out event with monies going to the March of Dimes Palm Beach Division. The non-profit organization is focused on improving childbirth and infant health with research and active programs for expectant mothers.
