Sweet Red Bell Pepper and Apple Soup

Poking around on the web for something else — it’s just like opening the dictionary if you’re a word nut – I hit upon this terrific soup I think would be delicious for Thanksgiving dinner. Doesn’t matter whether you’re a vegetarian or not — the Sweet Bell Pepper with Apple Soup is pretty and very fall-ish. A switch from pumpkin or sweet potato soups, also good on this day.

Sweet Red Bell Pepper and Apple Soup

• 4 large red bell pppers, seeded,ribs removed, chopped
• 1/2 cup onion, chopped
• 1 apple, peeled, cored and chopped
• 1 carrot, peeled and chopped
• 4 cups vegetable bouillon
• salt and pepper to taste
• pinch of chili powder

Saute the onion until glassy in the bottom of a soup pot over medium heat. Add the vegetables and apples and lightly saute until the peppers begin to soften.  

Add the vegetable bouillon and bring to a boil.

Turn the heat down to medium-low, and simmer for 15 minutes.

Puree the soup in a food processor or blender, or with a stick blender, to a smooth mixture. (Take care as soup is hot!)

Season to taste with salt and pepper, and if desired a pinch of chili powder. Garnish with croutons or bits of raw apple or carrot.

Makes 4 servings.
