Pumpkin Pancake Recipe, Chicken Balsamic Recipe from Pizza Time in Today’s Sentinel Column

In my column today in the Sun Sentinel get the recipe for Chicken Balsamic from Pizza Time restaurant.

I also featured this great Pumpkin Pancake recipe, too.

Pumpkin pancakes

  • 3/4 cup all-purpose flour, measured after sifting
  • 1/2 cup graham cracker crumbs
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 2 teaspoons molasses
  • 1/2 cup pumpkin puree
  • 1 cup reduced-fat milk
  • 1 tablespoon vegetable oil
  • Vegetable oil or non-stick cooking spray for greasing pan

Sift together flour, graham cracker crumbs, baking powder, salt, cinnamon, nutmeg, cloves and ginger in a large bowl. Add remaining ingredients and stir well to incorporate. Batter may have a few lumps.

Lightly oil or spray a griddle or heavy skillet. Heat over medium-high heat. Spoon about 3 tablespoons batter into skillet. Cook until bubbles form around edges of pancake about 2 minutes; use a wide spatula to turn pancake. Cook for 3 to 4 minutes longer.

Serve with pure maple syrup.

Makes 2 servings.

Per serving: 405 calories, 26% calories from fat, 12 g fat, 2 g saturated fat, 10 mg cholesterol, 65 g carbohydrates, 11 g protein, 882 mg sodium, 4 g fiber
