From my column today, the recipe from Boca’s Chops Lobster Bar for the made-tableside spinach salad, with marinated mushrooms and extra creamy basil dressing – good on all kinds of foods.

Now that looks fun! Love the idea of the basil dressing.

It’s great on a number of other vegetables – cooked artichoke, asparagus, green beans and even my beloved Brussels sprouts. Go easy on it, however; it’s very rich.

The dish is amazing as well as the man in charge of the food at Chops & Lobster Bar, Chef Holger. Probably the most happening place in all of Palm Beach County. The creamy basil is splendid. Simple yet innovative.

The chef was a delight to talk with – a real pro. Watch for other stories about him on my blog -we have a couple planned.
