Thanksgiving Recipes: Cranberry ‘Turkey Time Salsa’ a Winner

Jenny Elfving of Fort Lauderdale won the Perfect Side Dish contest with Turkey Time Salsa

A hint of jalapeno and the sweet-tart cranberry combination proved a winner for chef Jenny Elfving of Fort Lauderdale in the Perfect Side Dish contest held by Simon Malls.

I was a judge at the contest, held Nov. 20 at Coral Square Mall in Coral Springs, and sponsored by Simon Malls. It benefits the “What Can I Do?” hunger relief campaign going on statewide.

The contest focused on dishes made with canned foods; any chef or cook could enter. Five contestants made it to the finals for the judging. Other dishes included a bean and beet salad, a green bean casserole made with canned cheese soup, a pineapple bread pudding and a squash casserole.

Judges agreed the cranberry sauce was the best tasting of the dishes, and perfect for the holidays. For her win, Elfving was given a $100 mall gift card and $100 gift card from Pollo Tropical, one of the sponsors.

Here’s Elfving’s recipe.

Turkey Time Salsa

  • 1 16-ounce can whole berry cranberry sauce
  • 1/3 cup chopped jarred jalapenos
  • 1 orange, peeled, seeded, chopped
  • 1 tablespoon orange zest
  • 3 tablespoons chopped cilantro
  • 2 tablespoons white balsamic vinegar

Mix all ingredients and let stand for 30 minutes. Serve alongside turkey and trimmings.

Makes about 2-1/2 cups salsa.
