White Chocolate Chip-Macadamia Nut Cookie Recipe

We use our favorite web site, Cooks.com, to find recipes all the time.
This is one from there — but note, sometimes, you really have to read them carefully as they are submitted from everyday folks…mistakes happen!

  • White Chocolate Chip-Macadamia Nut Cookies
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    3/4 cup unsalted butter, softened
    1 cup firmly packed light brown sugar
    3/4 cup granulated sugar
    2 eggs, room temperature
    1 teaspooon vanilla
    12 oz. white chocolate, cut into 1/4 – inch chunks
    1 -1/2 cups coarsely chopped macadamia nuts

Cover 2 cookie sheets with parchment paper or buttered foil and set aside.

Preheat oven to 300 degrees.

Sift flour, soda, salt and set aside. Beat butter until creamy at low speed with mixer. Gradually add sugars and beat until light and fluffy.

Add eggs, one at a time, beating, well beaten each addition. Add vanilla.

Using a rubber spatula, stir in chocolate chips and nuts.

Use a 1/4 cup measuring cup to form cookies (they will be large). Pack dough into cup so it is even — see note. Drop on baking sheets leaving 3 inches between cookies. Flatten dough slightly. Bake on center rack of preheated 300 degree oven for 20-25 minutes or until light brown or edges but slightly, soft in center.

Cool 3 to 5 minutes on pan and then transfer to wire racks to cool.

Makes 2 dozen.

Note from Jan: Measuring the dough is one of the most crucial steps in baking cookies. If they’re all  the same size, you have a better chance they’ll bake evenly. Having a flat cookie pan (not warped), preheating the oven and spacing the cookies and pans also ensure success.

    Oh my gosh, I love anything with mcadamia nuts. When I was in Hawaii, I must have eaten a box of chocolate covered macadamia nuts every day.

    I had a baked fish covered in macadamia nuts years ago and it had an awesome flavor. Again, I love anything with macadamias.

    I don’t like white chocolate (a misnamed ingredient anyway), so I bake these cookies with dark chocolate chunks and the macadamias.

    Hi,
    When do you add the nuts and chocolate?-it isn’t mentioned in the instructions. Sounds like a great recipe.
